※ Origin: Boquete, Alto Quiel, Panama
※ Farm: Elida Estate
※ Process: Anaerobic Slow Dry - In this oxygen-free environment, a specific set of microbes (lactic acid bacteria and yeast) dominates the fermentation. This breaks down the sugars in the fruit mucilage differently than open-air fermentation, creating deep, wine-like, and complex tropical fruit flavors.
※ Variety: Catuai SHB (Strictly Hard Bean) — The SHB designation indicates it was grown at high altitudes, resulting in a denser bean with more complex flavors.
※ Altitude: 1,700 - 1,900 meters
※ Cupping score: +86 ~ + 95 points (2019 Worlwide Top30)
※ Flavor Profile: Mango, dried fruits, black grapes, fruit juice acidity, and a creamy mouthfeel.
Brewing Guide (Drip Bag Method)
1️⃣ Tear open the drip bag (12g ± 5% ground coffee) and hang it securely over your cup.
2️⃣ Bloom: Pour ~40 ml of hot water (90–92 °C) slowly and wait ~30 seconds.
3️⃣ Infuse: Add ~150–160 ml in 2–3 gentle pours to let the layers unfold.
4️⃣ Complete: Remove the drip bag once dripping stops.
