This process involves fermenting the coffee cherries in an oxygen-free environment before drying them with a portion of the fruit mucilage still attached, resulting in a complex, winey acidity.

Brewing Guide (Drip Bag Method)
1️⃣ Tear open the drip bag (12g ± 5% ground coffee) and hang it securely over your cup.
2️⃣ Bloom: Pour ~40 ml of hot water (90–92 °C) slowly and wait ~30 seconds.
3️⃣ Infuse: Add ~150–160 ml in 2–3 gentle pours to let the layers unfold.
4️⃣ Complete: Remove the drip bag once dripping stops.
